FSSC 22000 Food Safety Management System

FSSC 22000 Food Safety Management System

In today's world, where borders are gradually disappearing and the consumer is becoming more and more conscious every day, food security has become an indispensable concept. Therefore, when purchasing food, consumers also question how safe the food is.

Nutrition is one of the most basic necessities for our survival. As a result of years of experience, people now need to consume 'safe' food. According to the World Health Organization, food and water-borne diarrhea causes approximately 1,9 million deaths per year, including approximately 2,2 million children.

Many countries have established different food safety standards, taking into account their legal requirements, needs to produce safe food, and customer satisfaction. In multinational companies and companies exporting to different countries, this diversity has led to concept confusion and documentation density. The ISO 22000 Food Safety Management System Standard aims to eliminate this confusion.

Today, the most important issue for all food businesses is to ensure food safety. Food businesses have to prove that they somehow identify and control food safety hazards. They do this by applying them to internationally accepted food safety standards. The latest standard in food safety is the ISO 2005 standard published in September 22000.

FSSC 22000 system is a certification system built on the ISO 22000 standard. It also includes the PAS 220 standard in its content. This standard is the joint work of many certification bodies, especially Danone, Nestle, Unilever and Kraft companies, and is considered an international food standard.

The FSSC 22000 food safety standard, which is accepted worldwide today, is the fourth update in 2017. The FSSC 22000 standard has filled an important gap in achieving perfection in order to keep up with changing world conditions as all of the food safety standards developed so far are insufficient to meet the need. In fact, as in many other matters, the development and change of food safety systems are continuous. The fourth version of the FSSC 22000 standard is the most advanced food safety standard for today.

Regardless of location and volume, businesses producing all food products, food ingredients and food packaging materials can install and manage the FSSC 22000 Food Safety Management System. The FSSC 22000 standard is an effective management system, as well as bringing a successful food safety culture to businesses and is an important tool in the certification of businesses.

The FSSC 22000 Food Safety Management System is based on the implementation of the existing ISO 22000 and PAS 220 standards, and nowadays the demand for FSSC 22000 certification has increased in line with the demands of domestic and foreign food manufacturers and retailers.

Food safety requirements of food manufacturers, requirements for certification firms, FSSC 22000 accreditation rules, rules for stakeholders, the basic structure of the FSSC 22000 system.

FSSC 22000 has targeted food manufacturers and retailers to apply the standard requirements of ISO 22000 and PAS 220 in particular. It also emphasizes: compliance with applicable legal regulations, meeting customer requirements, and ensuring efficient personnel management.

Structure and layout of buildings, working area, placement of buildings and attachments, auxiliary facilities (air, water and energy resources), support services such as waste and sewage, equipment suitability, cleaning and maintenance, management of purchased materials, measures to be taken to prevent cross contamination, cleaning and sanitation, pest control, employee hygiene, reprocessing processes, product recall processes, storage processes, consumer information and food defense are the basic subjects of PAS 220 standard.
